With it’s deliciously seductive name, the red velvet is really just a chocolate cake that has been elevated to regal status by the addition of red dye. The cake is normally stacked in two or more layers and spread with luscious cream cheese or French Roux icing, which provides a striking contrast to the deep red cake.
